Menu Plan Monday ~ January 31, 2011

Last week I finally treated myself to a griddle! I’ve never had one and always wanted one. It’s so exciting to be able to cook more than one grilled cheese or pancake at a time. I love cooking GW breakfast, but now I don’t have to dirty three pans!

My chicken drumsticks were a hit last week (and super cheap) so they’re on the menu again this week. The Hearty Hamburger Casserole didn’t go over very well with the kiddos, but that didn’t matter because GW and I ate most of it anyway 🙂

Monday
Supper: Scrambled eggs, pancakes, sausage

Tuesday
Supper: Drumsticks, fries, raw veggies

Wednesday
Supper: Grilled peanut butter sandwiches, mac ‘n cheese, green beans (MC suggested the sandwiches which sound a little gross to me, but apparently she loves them. I’ll make some grilled cheese in case the rest of us don’t agree.)

Thursday
Supper: Hamburgers, fries, corn on the cob

Friday
Supper: YOYO

Saturday
Supper: GW and I are going to a hockey game, so the girls are on their own.

Sunday
Supper: Still looking for a new crockpot recipe…

Goodwill Mission ~ Week 2

I finally found the three most important boxes that went missing when we moved. Cookbooks and pots and pans!!! I’m so excited to have uncovered my cookbooks and my good cookware. Well, I didn’t uncover them, MC came across them while searching for some of her stuff. What a great surprise! In the midst of all my excitement, I was still able to fill my Goodwill box.

The garage is looking a little less cluttered. I figure by the time summer rolls around my car will finally have a home 🙂

Menu Plan Menu ~ January 24, 2011

This is the first week of my Goodwill Mission and although there wasn’t a stellar outcome, I filled my Goodwill box. Check out my Sunday update here. As a result, I have a book give-away, yay!

Peanut Butter Pancakes

Source: Taste of Home Fast Fixes with Mixes
Servings: 10 pancakes

1 c pancake mix
2 tbsp sugar
1 egg
1/3 c peanut butter
1 can (5 oz) evaporated milk
1/3 c water

Combine pancake mix and sugar. In a different bowl, mix eggs and peanut butter; add milk and water. Stir into dry ingredients. Pour batter by 1/4 c onto lightly greased med-hot griddle. Turn when bubbles form on top. Cook until golden brown.

Topping:
1/4 c butter, softened
2 tbsp honey

Hearty Hamburger Casserole

Source: Taste of Home Fast Fixes with Mixes
Servings: 4

1 lb ground beef
1 can (19 oz) ready to serve chunky vegetable soup
1 pkg (6 oz) instant stuffing
1/2 c shredded cheddar

Preheat oven to 350. Brown beef, drain. Add soup to beef. Prepare stuffing according to package; spoon 1/2 into greased 2-qt baking dish. Top with beef mixture, cheese and remaining stuffing. Bake, uncovered, for 30-35 minutes.

Goodwill Mission ~ Week 1

Last week wasn’t as productive as I hoped it’d be. It wasn’t that I was lazy, it was just to darn cold to be hanging out in the garage scrounging through boxes. I did, however, fill my Goodwill box.

I happened to notice I have an insurmountable number of boxes filled with books out in the garage. As I go through these, my plan is to catalog the books and say goodbye. I figure if I haven’t read them by now, I probably never will. I’m not much of a reader these days, unless it’s a cookbook 🙂 Besides, if I ever get in the mood to read any of these book, there’s a library right down the street.

Wednesday Ramblings

Have you ever heard of a bread store? I grew up in a small town where we had two grocery stores and a bakery. There weren’t specialty food stores and there sure as heck wasn’t a bread store.

I laughed the first time a friend told me about it. A store dedicated to selling just bread?! That’s crazy!

But it’s true. I’ll never spend more than 60cents on a loaf of regular white sandwich bread and I’ll never spend more than $1 for that special healthy multi-grain bread.

Sometimes these stores are disguised by a name including the word ‘bakery’, but they aren’t filled with long johns and bismarcks, just shelves and shelves of bread, hot dog buns, hamburger buns, bagels, etc.

My neighborhood bread store often has promotions such as bring in a can of food and get a loaf for free. What a great way to exchange those nonperishable kidney beans that nobody will ever eat for a loaf of bread that will be gone in three days!

Menu Plan Monday ~ January 17, 2011

Since I haven’t been eating healthy at all lately, it’s time for an emergency nutritional detox. I used to do one four times a year (every season change). I never quite made it ALL the way through the detoxes I chose, but I came close with the Three Day Fruit Detox.

I can’t wait for the Spring Equinox, I need to get started NOW!

Monday
Supper: Scrambled eggs, hash browns, sausage

Detox Day 1
Every two hours upon rising – sugar-free protein shake

Supper – 6 cups raw veggies (make it colorful, but at least 3/4 dark green veggies), lemon juice and olive oil dressing or 1/2 an avocado, 3-4 oz lean protein or 3 hard boiled eggs

Tuesday
Supper: Drumsticks, green beans, fries

Detox Day 2
Every two hours upon rising – fruit, preferably fresh but can also use frozen

Supper – 6 cups raw veggies (make it colorful, but at least 3/4 dark green veggies), lemon juice and olive oil dressing or 1/2 an avocado, protein shake

Wednesday
Supper: YOYO

Detox Day 3
Same as Day 2

Theme Thursday
Supper: Potato Cheese Soup (my own recipe, I’ll post the link if it turns out), grilled cheese, mac ‘n cheese

Friday
Supper: Quick & Easy Chili, cornbread muffins

Saturday
Supper: YOYO

Sunday
Supper: Roast, potatoes, carrots, celery

Goodwill, Here I Come!

When we moved last November, I vowed to get rid of all the crap I don’t need and never use.

I ended up getting rid of about 50% of all the crap I don’t need and never use. The rest is boxed up in the garage, robbing my car of it’s nice, warm, comfy bed.

Although my car is an old junker, it treats me well and I can only imagine it will continue to treat me well if I do the same for it.

Also, we have a deep freeze (I’ve never owned one until now) that’s currently living with a friend of ours because there’s just no room for it at our house.

My plan? One box a week to Goodwill. It can’t be that hard, can it?

Starting next week and every Sunday after, I’ll post a list of items that Goodwill can expect to receive on Monday. If I come across anything that I think will be useful to my fellow Simplifiers, I’ll post a give-away announcement with my Menu Plan Monday post.

Quick & Easy Chili

1 lb ground beef
1 green pepper, chopped
2 clove garlic, minced
1 can chili beans, undrained
2 cans Rotel, undrained
1 can diced onion and garlic tomatoes, undrained
1 can diced tomatoes, drained
1 tbs chili powder

Brown ground beef with green pepper and garlic. Put everything in the crock pot and cook on low 6-8 hours or simmer 30-45 minutes on stove.
